Rice Pudding with Coconut and Almonds
A light and natural rice pudding made with rice flour, honey and rice malt, enriched with coconut, almonds and raisins. A delicate and wholesome dessert, perfect even for breakfast.
Ingredients
- Rice flour 100 g
- Raisins 50 g
- Water 4 cups
- Coconut flour 1 tbsp
- Chopped almonds 2 tbsp
- Honey 1 tbsp
- Rice malt 1 tbsp
- Vanilla 1 piece
- Salt a pinch

- Saucepan
- Wooden spoon
- Bowls
- Double boiler

Instructions
- Cook the rice flour in water for a few minutes over low heat, stirring often.
- Soak the raisins in warm water.
- Remove from heat, add salt, raisins, coconut, almonds, malt and vanilla.
- Cook in a double boiler for about 30 minutes, stirring occasionally.
- Let it cool slightly, add honey, stir and pour into cups.
- Garnish with fruit jam and serve chilled.
