Instructions
- Clean the squid, keeping the bodies intact; finely chop the tentacles and shrimp.
- Clean and slice the artichokes, keeping them in lemon water.
- Sauté garlic in olive oil, add drained artichokes and cook.
- Add chopped tentacles and shrimp, season, and deglaze with white wine.
- Stuff the squid and seal with a toothpick.
- Pan-sear the stuffed squid, deglaze again with wine, and add parsley.
- Finish in the oven at 200°C (390°F) for about 40 minutes.
- Serve whole or sliced, with pilaf rice or fresh salad.
