Ingredients

  • Squid 600 g (4 medium)
  • Shrimp 200 g
  • Artichokes 2
  • Garlic 1 clove
  • Parsley 1 bunch
  • Lemon juice
  • Dry white wine
  • Extra virgin olive oil
  • Salt
  • Pepper

Instructions

  1. Clean the squid, keeping the bodies intact; finely chop the tentacles and shrimp.
  2. Clean and slice the artichokes, keeping them in lemon water.
  3. Sauté garlic in olive oil, add drained artichokes and cook.
  4. Add chopped tentacles and shrimp, season, and deglaze with white wine.
  5. Stuff the squid and seal with a toothpick.
  6. Pan-sear the stuffed squid, deglaze again with wine, and add parsley.
  7. Finish in the oven at 200°C (390°F) for about 40 minutes.
  8. Serve whole or sliced, with pilaf rice or fresh salad.
