Ingredients

  • Chicken pieces 1.5 kg
  • White flour 5 tbsp
  • Vegetable oil 3 tbsp
  • Garlic cloves 2
  • Onions 2
  • Green pepper 1
  • Celery 50 g
  • Curry powder 1 tbsp
  • Salt 2 tsp
  • Canned peeled tomatoes 800 g
  • Butter 1 knob
  • Blanched almonds 50 g
  • Long-grain rice 225 g
  • Seedless raisins 75 g
  • Chopped parsley

Instructions

  1. Coat the chicken pieces in flour. Heat the oil in a large pan and brown the chicken on all sides, a few pieces at a time. Set aside.
  2. Add garlic, onion, green pepper, celery, curry powder and salt to the pan; cook for 5 minutes, stirring.
  3. Stir in the tomatoes with their juices.
  4. Return the chicken to the pan and bring to a boil. Lower the heat, cover and simmer for 30 minutes, until tender.
  5. Meanwhile, melt the butter in a frying pan and lightly toast the almonds until just golden.
  6. Mix the hot cooked rice with the raisins and toasted almonds.
  7. Arrange the rice mixture and chicken on a warmed serving platter. Remove the garlic cloves, spoon the sauce over the chicken.
  8. Finish with chopped parsley and serve hot.
