Ingredients

  • Beef fillets 2
  • Butter 150 g
  • Cooking cream 200 ml
  • Gorgonzola cheese 200 g
  • Mustard 1 tbsp
  • Cognac or dry brandy 1 glass
  • Olive oil as needed
  • Salt as needed

Instructions

  1. In a bowl mix 100 g butter, cream, gorgonzola and mustard until smooth.
  2. Heat olive oil and remaining butter in a pan and sear the fillets on both sides.
  3. Deglaze with cognac and flambé briefly.
  4. Remove fillets and keep warm.
  5. Add gorgonzola cream to the pan and cook gently for 3–5 minutes.
  6. Return fillets to the pan and cook for another 5–7 minutes, turning often.
  7. Serve hot.
