Ingredients

  • Shrimp or crab meat 400 g
  • Dried Chinese mushrooms 100 g
  • Chives 1 bunch
  • Egg 1
  • Lotus seed paste 2 tbsp
  • Sherry 2 cl
  • Salt 1/2 tsp
  • Sugar 1/2 tsp
  • MSG 1/2 tsp
  • Potato starch 4 tbsp
  • White bread slices 4
  • Eggs 2 (for coating)
  • Breadcrumbs as needed
  • Oil for frying

  • Meat grinder
  • Bowl

  • Frying pan
  • Kitchen thermometer

Instructions

  1. Finely mince shrimp and soaked mushrooms.
  2. Mix with chopped chives, egg, lotus seed paste and Sherry.
  3. Season with salt, sugar and MSG.
  4. Add starch until smooth.
  5. Cut the bread into quarters and spread the mixture.
  6. Dip in beaten eggs and breadcrumbs.
  7. Fry starting at 120°C and increasing to 180°C for a crispy finish.
  8. Serve hot.
