- Peeled almonds 200 g
- Soy sauce 3 tbsp
- Sugar 1 tsp
- Port or fortified wine 1 tbsp
- Potato starch 1.5 tbsp
- Garlic 2 cloves (pressed)
- White pepper to taste
- Vegetable oil for frying almonds

Instructions
- Mix chicken with soy sauce, sugar, port, potato starch, pressed garlic and white pepper. Let rest a few minutes.
- Toast the almonds in very hot oil until golden and crisp.

- Add the chicken to the very hot pan and stir-fry for about 1.5 minutes.
- Combine with toasted almonds and serve immediately.
