Ingredients

  • 5.5 kg ripe tomatoes, peeled and chopped
  • 3 large onions
  • 2 green bell peppers, cleaned and chopped
  • 1/2 garlic clove
  • 250 g sugar
  • 3.5 dl vinegar
  • 1.5 tbsp salt
  • 1 tbsp paprika
  • 1 tbsp mustard powder
  • Cinnamon stick (8 cm)
  • Black peppercorns 1 tsp
  • Allspice berries 1 tsp
  • Cloves 1 tbsp
  • 1 dried red chili
  • Fennel or celery seeds 1 tsp

Tools

  • Large pot
  • Fine sieve
  • Cheesecloth
  • Sterilized jars
  • Wooden spoon

Instructions

  1. Combine tomatoes, onions, peppers and garlic. Simmer 45 minutes until peppers are soft.
  2. Press through a fine sieve.
  3. Boil another 30 minutes.
  4. Add sugar, vinegar, salt, paprika, mustard and the spice bag.
  5. Simmer 2–3 hours stirring often until thick.
  6. Remove spice bag.
  7. Pour into hot sterilized jars and seal.
  8. Alternatively, sterilize jars by boiling 45 minutes after sealing.
