- 5.5 kg ripe tomatoes, peeled and chopped
- 3 large onions
- 2 green bell peppers, cleaned and chopped
- 1/2 garlic clove
- 250 g sugar
- 3.5 dl vinegar
- 1.5 tbsp salt
- 1 tbsp paprika
- 1 tbsp mustard powder
- Cinnamon stick (8 cm)
- Black peppercorns 1 tsp
- Allspice berries 1 tsp
- Cloves 1 tbsp
- 1 dried red chili
- Fennel or celery seeds 1 tsp

- Large pot
- Fine sieve
- Cheesecloth
- Sterilized jars
- Wooden spoon
Instructions
- Combine tomatoes, onions, peppers and garlic. Simmer 45 minutes until peppers are soft.
- Press through a fine sieve.
- Boil another 30 minutes.
- Add sugar, vinegar, salt, paprika, mustard and the spice bag.
- Simmer 2–3 hours stirring often until thick.
- Remove spice bag.
- Pour into hot sterilized jars and seal.
- Alternatively, sterilize jars by boiling 45 minutes after sealing.
