Ingredients

  • Flour 200 g
  • Butter 150 g
  • Egg yolks 3
  • Whole eggs 2
  • Smoked bacon 200 g
  • Heavy cream 400 ml
  • Salt to taste

Instructions

  1. Prepare the dough mixing flour, butter, egg yolk, and salt with a little water. Let rest.
  2. Blanch the bacon for 1 minute and drain.
  3. Beat 2 whole eggs and 2 yolks, salt, and add the cream.
  4. Line a 20 cm tin with the dough and prick the base.
  5. Arrange bacon on the bottom and pour the custard mixture.
  6. Top with small knobs of butter and bake 40 minutes, stronger heat from the bottom.
  7. Let cool slightly and serve.
