- Water 600 ml
- Lemon 1/2 (juice)

Instructions
- Wash and dry the rose petals thoroughly.
- Chop the petals with a mezzaluna or knife, without over-mincing them.
- Mix the petals with 200 g sugar and lemon juice, massaging well by hand.
- Heat the water with the remaining sugar until it dissolves.
- Add the petal mixture into the syrup and cook over medium heat.
- Simmer until the jam becomes thick and slightly sticky.
- Transfer the jam into sterilized jars and seal.
