Ingredients

  • Sugar 250 g
  • Fresh cream 250 cl
  • Vanilla powder 1 packet
  • Finely grated orange zest
  • Pinch of salt

Tools

  • Saucepan
  • Wooden spoon
  • Knife
  • Marble surface

Instructions

  1. Melt the sugar over low heat until it becomes dark-golden caramel.
  2. Remove from heat and add cream, vanilla, orange zest and salt carefully.
  3. Return to heat and cook 20–25 minutes, stirring constantly, until thick and smooth.
  4. Pour onto a lightly oiled marble surface.
  5. Shape and flatten with an oiled knife.
  6. Cut into small pieces and allow to cool completely.
  7. Store in a cool, dry place.
