- Finely grated orange zest
- Pinch of salt

Instructions
- Melt the sugar over low heat until it becomes dark-golden caramel.
- Remove from heat and add cream, vanilla, orange zest and salt carefully.
- Return to heat and cook 20–25 minutes, stirring constantly, until thick and smooth.
- Pour onto a lightly oiled marble surface.
- Shape and flatten with an oiled knife.
- Cut into small pieces and allow to cool completely.
- Store in a cool, dry place.
