Ingredients

  • Margarine 85 g
  • Sugar 113 g
  • Egg yolks 2
  • Milk 2 tbsp
  • Self-raising flour 170 g
  • Salt 1/2 tsp
  • Egg whites 2 (stiffly beaten)
  • Dessicated coconut 56 g
  • Sugar 113 g (for topping)
  • Chopped nuts 28 g
  • Chopped glacé cherries 28 g

Instructions

  1. Grease a flat tin and preheat oven to 350°F (180°C).
  2. Cream margarine and sugar until light.
  3. Add egg yolks, milk, flour and salt; spread the mixture into the tin.
  4. Prepare the topping by beating egg whites with sugar until stiff.
  5. Fold in coconut, nuts and cherries. Spread over the base.
  6. Bake for about 20 minutes until pale golden.
  7. Cool slightly and cut into slices.
