Mother Goose Rillettes are a rustic French delicacy where goose and pork belly simmer for hours with herbs until they turn into a rich, spreadable paste preserved under a layer of fat.

Ingredients

  • Goose cut into pieces 750 g
  • Fresh pork belly cubes 500 g
  • Water 2 dl
  • Finely chopped onion 1
  • Finely chopped carrot 1
  • Bouquet of herbs 1
  • Salt to taste
  • Pepper to taste

  • Large pot
  • Sieve
  • Fork
  • Glass jars

Instructions

  1. Place goose, pork belly, onion, carrot, herbs, water, salt and pepper in a large pot.
  2. Cook over very low heat for 7–8 hours until the goose meat falls off the bone.
  3. Strain through a sieve and reserve the rendered fat.
  4. Shred the meat, removing any small bones.
  5. Pack tightly into glass jars.
  6. Cover completely with the melted cooking fat.
  7. Store in a cool place or refrigerator for 2–3 months; once opened, consume within 5–6 days.
