Ingredients

  • Peach pulp 250 g
  • Egg 1
  • Flour 30 g
  • Sugar 150 g
  • Milk 150 g
  • Lemon zest 1 piece

Instructions

  1. Beat the egg with sugar until light and fluffy.
  2. Add flour and dilute with milk.
  3. Add lemon zest and heat the cream over low heat until it thickens.
  4. Remove from heat just before boiling, discard the zest, and let it cool.
  5. Peel and pit the peaches, then blend into a purée.
  6. Combine peach purée with the cooled custard and pour into the ice cream maker.
  7. Churn until smooth and creamy.
