- 1 sheet shortcrust or puff pastry (22 cm)
- 250 g champignons
- 1 small onion
- 1 tbsp madeira
- 150 ml cream
- 1 large egg (or 2 small) + 1 egg white
- 1.5 tbsp flour
- 25 g butter
- 1 tbsp oil
- Salt to taste
- Pepper to taste

Instructions
- Clean and quarter the mushrooms. Finely chop the onion.
- Heat oil and butter in a pan, sauté the onion until transparent.
- Add mushrooms and cook 3 minutes. Season, add flour, cook 2 more minutes. Remove from heat.
- Whisk egg, madeira and cream. Season. Add mushrooms and onion and mix.
- Preheat oven to 200°C.
- Brush pastry with beaten egg white. Fill with mushroom mixture.
- Bake 20–25 minutes until golden. Serve warm.
