Ingredients

  • 1 sheet shortcrust or puff pastry (22 cm)
  • 250 g champignons
  • 1 small onion
  • 1 tbsp madeira
  • 150 ml cream
  • 1 large egg (or 2 small) + 1 egg white
  • 1.5 tbsp flour
  • 25 g butter
  • 1 tbsp oil
  • Salt to taste
  • Pepper to taste

  • 22 cm tart pan

Instructions

  1. Clean and quarter the mushrooms. Finely chop the onion.
  2. Heat oil and butter in a pan, sauté the onion until transparent.
  3. Add mushrooms and cook 3 minutes. Season, add flour, cook 2 more minutes. Remove from heat.
  4. Whisk egg, madeira and cream. Season. Add mushrooms and onion and mix.
  5. Preheat oven to 200°C.
  6. Brush pastry with beaten egg white. Fill with mushroom mixture.
  7. Bake 20–25 minutes until golden. Serve warm.
