Ingredients

  • Vialone Nano rice 320 g
  • Onion 1
  • Garlic clove 1
  • Zest of 1 lemon (yellow part only)
  • Juice of 1/2 lemon
  • Cream 3 tbsp
  • Meat broth about 700 ml
  • Dry white wine 1/2 cup
  • Olive oil to taste
  • Butter to taste
  • Salt to taste
  • Pepper to taste
  • Grated Parmesan cheese generous amount
  • Chopped parsley (optional)

Instructions

  1. Finely chop the onion and lightly crush the garlic clove.
  2. In a saucepan, heat olive oil and butter, then add onion and garlic until golden.
  3. Remove the garlic and toast the rice until translucent.
  4. Deglaze with white wine and let it evaporate completely.
  5. Gradually add hot broth while stirring.
  6. After about 12 minutes, add lemon zest and the juice of half a lemon.
  7. When cooked, stir in a knob of butter, cream, and Parmesan.
  8. Adjust with pepper and garnish with parsley if desired.
  9. Serve immediately while hot.
