- Chicken pieces 1 whole chicken
- Dried porcini mushrooms 30 g
- Onion 1
- Carrot 1
- Celery stalk 1
- White wine 1 glass
- Broth 1 cup
- Tomato sauce 300 g
- Extra virgin olive oil 2 tbsp
- Salt to taste
- Black pepper to taste

Instructions
- Heat the olive oil in a large casserole and brown the chicken pieces over high heat.
- Soak the dried porcini mushrooms in hot water until soft, then roughly chop them.
- Add the mushrooms to the chicken and cook for a few minutes to release their aroma.
- Finely chop the onion, carrot and celery and add them to the pot.
- Deglaze with white wine and let it evaporate.
- Add the tomato sauce, salt and pepper, cover and simmer for about 40 minutes.
- Add broth occasionally if needed.
- Uncover at the end of cooking and reduce the sauce.
