Ingredients

  • 1 chicken cut into pieces
  • 1 large onion, quartered
  • 1 large carrot, sliced
  • 2 medium potatoes per person, peeled
  • 1 cup rice
  • 1 cup thinly sliced green beans
  • 1 large egg
  • 1 celery leaf with stalk
  • 1 bunch parsley, chopped
  • Fresh or dried oregano
  • Olive oil
  • Salt and pepper to taste
  • (Optional: chili or curry powder)

Instructions

  1. In a large pot, sauté the chicken with onion, carrot, parsley, celery, and oregano in plenty of olive oil.
  2. When fragrant, add about 2.5–3 liters (10–12 cups) of hot water.
  3. Simmer until the chicken is half cooked.
  4. Add the potatoes, green beans, and rice.
  5. Season with salt and pepper and cook until the chicken is tender and the rice is done.
  6. Just before removing from heat, pour in the beaten egg while stirring quickly to thicken the soup.
  7. Serve hot with a drizzle of olive oil and a pinch of chili or curry if desired.
