- 1 chicken cut into pieces
- 1 large onion, quartered
- 1 large carrot, sliced
- 2 medium potatoes per person, peeled
- 1 cup rice
- 1 cup thinly sliced green beans
- 1 large egg
- 1 celery leaf with stalk
- 1 bunch parsley, chopped
- Fresh or dried oregano
- Olive oil
- Salt and pepper to taste
- (Optional: chili or curry powder)

Instructions
- In a large pot, sauté the chicken with onion, carrot, parsley, celery, and oregano in plenty of olive oil.
- When fragrant, add about 2.5–3 liters (10–12 cups) of hot water.
- Simmer until the chicken is half cooked.
- Add the potatoes, green beans, and rice.
- Season with salt and pepper and cook until the chicken is tender and the rice is done.
- Just before removing from heat, pour in the beaten egg while stirring quickly to thicken the soup.
- Serve hot with a drizzle of olive oil and a pinch of chili or curry if desired.
