Ingredients

  • Spinach (fresh or frozen) 400 g
  • Butter 30 g
  • Ricotta cheese 200 g
  • Cooking cream 150 ml
  • Nutmeg to taste
  • Salt to taste
  • Black pepper to taste
  • Chopped parsley to taste

Instructions

  1. Finely chop the spinach if needed.
  2. Melt the butter in a large pan over medium heat.
  3. Add the spinach and sauté until excess moisture evaporates.
  4. Season with salt and a pinch of nutmeg.
  5. Stir in the ricotta until smooth.
  6. Gradually add the cream until the desired consistency is reached.
  7. Cook for another 2–3 minutes, stirring constantly.
  8. Finish with black pepper and chopped parsley.
  9. Use immediately to toss with pasta.
