Ingredients

  • Canned chickpeas 240 g drained
  • Mackerel or tuna in oil 100–150 g
  • Onion 1 small
  • Smoked herring fillet 1/2
  • Dry couscous 160 g
  • Butter as needed
  • Salt to taste
  • Orange zest (optional)
  • Celery (optional)

Instructions

  1. Finely chop the onion.
  2. Place drained chickpeas in a bowl, add flaked mackerel or tuna and three quarters of the onion. Mix well.
  3. Dice the smoked herring very finely.
  4. Prepare the couscous according to package instructions, stopping before pan-toasting.
  5. Melt butter in a pan, add herring and remaining onion and sauté briefly.
  6. Add couscous to the pan and toss quickly.
  7. Combine everything with the chickpea mixture. Serve warm or cold.
  8. Optionally add a pinch of orange zest or finely chopped celery.
