Ingredients

  • Butter 175 g
  • Sugar 80 g
  • Eggs 3
  • Flour 170 g
  • Baking powder 1 sachet
  • Salt 1 pinch
  • Lemon zest to taste
  • Butter 50 g (for pan)
  • Brown sugar 50 g
  • Canned pineapple 300 g (drained)
  • Maraschino cherries 6

Instructions

  1. Melt 50 g of butter in a 30x30 cm glass baking dish in the oven at 190 °C.
  2. Remove from the oven, sprinkle the bottom with brown sugar and return briefly to the oven.
  3. Cream the butter with sugar until smooth.
  4. Add eggs one at a time, mixing well.
  5. Stir in flour, baking powder, salt, and lemon zest.
  6. Arrange pineapple slices and cherries on the caramelized base.
  7. Gently pour the batter over the fruit.
  8. Bake at 190 °C for about 30 minutes.
  9. Let cool slightly in the oven, then invert onto a rack to cool completely.
