Ingredients

  • Fresh Chinese noodles 400 g
  • Lard 8 tbsp
  • Chicken breast 150 g
  • Ginger juice 1 tbsp
  • Sake 3 tbsp
  • Potato starch 2.5 tbsp
  • Cooked ham 3 slices
  • Dried Chinese mushrooms 4
  • Boiled bamboo shoots 100 g
  • Leeks or spring onions 1 bunch
  • Peanut oil 4 tbsp
  • Broth 3 cups
  • Salt 0.5 tbsp
  • Sugar 2 tsp

Instructions

  1. Slice the chicken diagonally and marinate with ginger juice, sake and starch.
  2. Cut ham into strips and bamboo shoots into thin slices.
  3. Soak dried mushrooms and slice them.
  4. Cut leeks into 3–4 cm pieces.
  5. Heat 2 tbsp oil in a wok, stir-fry chicken and set aside.
  6. Add remaining oil and stir-fry vegetables; add ham and chicken.
  7. Mix broth, salt, sugar and sake; pour into wok and cook 2 minutes.
  8. Add dissolved starch and let thicken.
  9. Cook noodles al dente, drain and stir-fry with melted lard.
  10. Serve noodles topped with chicken and vegetable sauce.
