- Fresh Chinese noodles 400 g
- Lard 8 tbsp
- Chicken breast 150 g
- Ginger juice 1 tbsp
- Sake 3 tbsp
- Potato starch 2.5 tbsp
- Cooked ham 3 slices
- Dried Chinese mushrooms 4
- Boiled bamboo shoots 100 g
- Leeks or spring onions 1 bunch
- Peanut oil 4 tbsp
- Broth 3 cups
- Salt 0.5 tbsp
- Sugar 2 tsp

Instructions
- Slice the chicken diagonally and marinate with ginger juice, sake and starch.
- Cut ham into strips and bamboo shoots into thin slices.
- Soak dried mushrooms and slice them.
- Cut leeks into 3–4 cm pieces.
- Heat 2 tbsp oil in a wok, stir-fry chicken and set aside.
- Add remaining oil and stir-fry vegetables; add ham and chicken.
- Mix broth, salt, sugar and sake; pour into wok and cook 2 minutes.
- Add dissolved starch and let thicken.
- Cook noodles al dente, drain and stir-fry with melted lard.
- Serve noodles topped with chicken and vegetable sauce.
