- Parboiled rice 300 g
- Butter 30 g
- Olive oil 2 tbsp
- Lard 1 tbsp (or extra butter)
- Onion 1
- Hot broth (vegetable or meat) 300 ml
- Salt to taste
- Grated Parmesan to taste

Instructions
- In an ovenproof pot, melt butter, oil, and lard.
- Thinly slice the onion and sauté until golden.
- Add the rice and toast for about 10 minutes, stirring frequently.
- Pour in hot broth in a 1:1 ratio with the rice.
- When it starts to boil, transfer the pot to a hot oven (200°C / 400°F) uncovered.
- Bake for 25 minutes for tender rice, or up to 40 minutes for a crispier result.
- Serve plain or topped with vegetable, meat, or fish sauces.
- Also great with a fried egg and a sprinkle of Parmesan cheese.
