Curry Risotto is a simple and aromatic first course made with onion, tomato and curry powder. A quick golden dish with a warm, spicy flavor, perfect for an easy but flavorful meal.

Ingredients

  • Superfine or Thai rice 300 g
  • Medium onion 1
  • Extra virgin olive oil 2 tablespoons
  • Curry powder 1 teaspoon
  • Crushed tomato 4 tablespoons
  • Water 700 ml
  • Salt to taste

  • Cutting board
  • Microwave-safe bowl
  • Spoon
  • Kettle or pot

Instructions

  1. Bring 700 ml of water to a boil.
  2. Finely chop the onion and place it in a microwave-safe bowl with olive oil and curry. Cook uncovered for 2 minutes at full power.
  3. Add the crushed tomato and cook for 3 more minutes.
  4. Add the rice, salt and boiling water. Stir well.
  5. Cook uncovered at full power for about 11 minutes, stirring once or twice.
  6. Let rest for about 3 minutes before serving.
