Ingredients

  • Peeled beets 400 g
  • Onion 20 g
  • Garlic 2 cloves
  • Celery 10 g
  • Parsnip 10 g
  • Carrot 30 g
  • Water 1.5 l
  • Bouillon 2 teaspoons
  • Bay leaf 1
  • Peppercorns to taste
  • Lemon juice 2 tablespoons
  • Marjoram 1/2 teaspoon
  • Dried mushrooms 1-2 optional
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Place the beets, onion, garlic, celery, parsnip and carrot into the Thermomix bowl. Chop for 10 seconds at speed 6-7.
  2. Transfer the chopped vegetables to the simmering basket and set aside.
  3. Pour the water into the bowl, then add the bouillon, bay leaf, peppercorns, marjoram and, if using, the dried mushrooms.
  4. Insert the basket with the vegetables into the bowl and cook for 15 minutes at 100°C on speed 4.
  5. Three minutes before the end of cooking, add the lemon juice directly into the bowl.
  6. At the end of cooking, adjust with salt and pepper to taste.
  7. Serve the hot broth on its own or with dumplings, Chinese dumplings, croquettes or sausages.
  8. The cooked vegetables can be served as a side dish or used in a warm salad.
