Ingredients

  • Zucchini 3
  • Arugula 1 bunch
  • Garlic 2 cloves
  • Extra virgin olive oil to taste
  • Vinegar to taste
  • Salt to taste

Tools

  • Grill or pan
  • Bowl
  • Knife
  • Cutting board

Instructions

  1. Slice the zucchini lengthwise.
  2. Marinate them in oil, vinegar, salt and garlic for at least three hours.
  3. Grill or pan-cook the zucchini for 5 minutes per side.
  4. Place half of the arugula on a plate, add the zucchini and top with the remaining chopped arugula.
  5. Serve cold.
