Ingredients

  • Young red wine 1 l
  • Cloves 3 g
  • Coriander seeds 3 g
  • Cinnamon sticks 7
  • Cubeb pepper 1 g
  • Vanilla pods 2
  • Bay leaf 1
  • Sage leaves 4
  • Brown sugar 100 g
  • Brandy to taste (optional)

Instructions

  1. Pour the wine into a covered container.
  2. Add all spices and herbs.
  3. Let macerate for 12 hours.
  4. Transfer to a pot and slowly bring to a boil.
  5. Simmer gently until reduced by one third.
  6. Strain if desired and serve piping hot.
  7. Optionally add a splash of brandy before serving.
