Two-Tone Bavarian Cream is a refined spoon dessert made with custard, whipped cream and milk chocolate, arranged in elegant alternating layers. Light, creamy and visually stunning.

Ingredients

  • Egg yolks 3
  • Sugar 120 g
  • Whole milk 250 ml
  • Gelatin sheets 8 g
  • Milk chocolate 50 g
  • Fresh cream 400 ml

Instructions

  1. Whisk egg yolks with sugar until pale.
  2. Gradually add boiling milk, then cook gently until the custard coats the spoon.
  3. Remove from heat and add softened gelatin.
  4. Strain the custard and divide into two equal parts.
  5. Melt the chocolate in a bain-marie and mix into one half.
  6. Let both mixtures cool slightly.
  7. Whip the cream and fold equally into both custards.
  8. Pour alternately into a mold creating four layers.
  9. Chill for at least 3 hours.
