Ingredients

  • Fresh beans 1 kg (or dried beans 300 g)
  • Mixed pasta 500 g
  • Minced cured pork fat (lardo) 100 g
  • Extra virgin olive oil 1/2 cup
  • Ripe tomatoes 500 g
  • Onion 1
  • Celery stalk 1
  • Marjoram 1 bunch
  • Salt to taste
  • Black pepper to taste
  • Chili pepper to taste

Instructions

  1. If using dried beans, soak them in water for about 12 hours.
  2. Boil the beans with the celery stalk until tender.
  3. In a pot, sauté the chopped onion with minced lardo and olive oil.
  4. Add chopped ripe tomatoes, season with salt and a pinch of black pepper.
  5. Cook the mixed pasta in salted boiling water.
  6. Combine pasta, beans, and sauce, mixing well.
  7. Add chili pepper to taste and serve hot.
