Ingredients

  • Tagliolini pasta 320 g
  • Zucchini 3
  • Chives 1 tbsp
  • Fresh thyme leaves 1 tbsp
  • Parsley 1 tbsp
  • Smoked mozzarella 150 g
  • Garlic clove 1
  • Extra virgin olive oil q.b.
  • Salt q.b.
  • Black pepper q.b.

Instructions

  1. Mix all the fresh herbs with two tablespoons of olive oil and set aside.
  2. Wash and trim the zucchini, then cut them into thin strips.
  3. Heat two tablespoons of olive oil with the garlic clove in a pan; once golden, crush and remove it.
  4. Add the zucchini and sauté over high heat until tender but still crisp. Season with salt and remove from heat.
  5. Cut the smoked mozzarella into small cubes.
  6. Cook the tagliolini in salted boiling water.
  7. Drain the pasta and toss it with the herb oil, zucchini and smoked mozzarella.
  8. Finish with freshly ground black pepper and serve immediately.
