Ingredients

  • Herring 6
  • Flour 100 g
  • Butter or margarine 60 g
  • Onions 2
  • White vinegar 400 ml
  • Sugar 40 g
  • Dill or wild fennel to taste

Instructions

  1. Clean the herring, split them in half and remove all bones.
  2. Coat them lightly with flour on both sides.
  3. Melt the butter in a large pan and add the herring.
  4. Cook gently over low heat for about 20 minutes until golden.
  5. Arrange the herring on a serving dish and cover with sliced onions.
  6. Prepare the sauce by reducing water, vinegar and sugar over low heat for 30 minutes.
  7. Let the sauce cool slightly and pour it over the herring.
  8. Garnish with dill or wild fennel and let rest for a few hours before serving.
