- Butter or margarine 60 g
- Onions 2
- White vinegar 400 ml
- Sugar 40 g
- Dill or wild fennel to taste

Instructions
- Clean the herring, split them in half and remove all bones.
- Coat them lightly with flour on both sides.
- Melt the butter in a large pan and add the herring.
- Cook gently over low heat for about 20 minutes until golden.
- Arrange the herring on a serving dish and cover with sliced onions.
- Prepare the sauce by reducing water, vinegar and sugar over low heat for 30 minutes.
- Let the sauce cool slightly and pour it over the herring.
- Garnish with dill or wild fennel and let rest for a few hours before serving.
