Ingredients

  • Pork loin 1 kg
  • Whole-grain mustard 1 tbsp
  • Garlic 1/2 head
  • Fresh ginger 5 slices (1 cm)
  • White wine 1 tbsp
  • Honey 1 tsp
  • Extra virgin olive oil 1 tbsp
  • Seed oil 2 tbsp
  • Meat stock 1.5 cups
  • Rum 1/2 cup
  • Cold butter 50 g (optional)
  • Salt to taste

Instructions

  1. Crush mustard, garlic, and ginger in a mortar until paste-like.
  2. Mix with white wine, honey, and olive oil.
  3. Rub the paste over the entire pork loin.
  4. Add seed oil to a roasting pan suitable for oven and stovetop and place the meat inside.
  5. Roast at 220°C (430°F) for about 1 hour and 15 minutes.
  6. Season with salt halfway through cooking to form a golden crust.
  7. Wrap the roast in foil and rest for 20 minutes.
  8. Degrease the pan and deglaze with stock and rum, reducing by half.
  9. Whisk in cold butter if desired.
  10. Slice the pork, spoon over the sauce, and serve hot.
