Ingredients

  • Apples 3
  • Sugar to taste
  • Orange zest to taste
  • Lemon zest to taste
  • Ground cinnamon 1/4 tsp
  • Milk 250 ml
  • Star anise 2 pods
  • Candied ginger 2 tbsp
  • Walnuts 3 tbsp
  • Eggs 4
  • Sugar 4 tbsp
  • Cornstarch 2 heaping tbsp
  • Southern Comfort or Rum 2 tbsp
  • Puff pastry 2 sheets
  • Pears 2
  • Banana 1

Instructions

  1. Prepare an apple compote by cooking apples with sugar, citrus zest and water; blend and add cinnamon.
  2. Infuse star anise in boiling milk for 20 minutes, then discard.
  3. Finely chop candied ginger and walnuts.
  4. Whisk eggs with sugar and cornstarch, add milk and apple compote and gently bring to a boil while stirring.
  5. Remove from heat and add liqueur, walnuts and ginger.
  6. Line two baking tins with puff pastry and fill with the lukewarm mixture.
  7. Decorate with pear and banana slices.
  8. Bake at 180°C (350°F) for about 45 minutes.
  9. Serve warm.
