Ingredients

  • Rice 350 g
  • Smoked provola cheese 100 g
  • Butter 60 g
  • Parmigiano cheese 40 g
  • Small onion 1
  • Brut sparkling wine as needed
  • Beef broth as needed
  • Salt to taste
  • Pepper to taste

Instructions

  1. Finely chop the onion and sauté it with half of the butter.
  2. Add the rice and toast until translucent.
  3. Cook by adding broth gradually until almost done.
  4. Add the diced provola and finish cooking using sparkling wine instead of broth.
  5. Remove from heat and stir in the remaining butter and Parmigiano.
  6. Add a final splash of sparkling wine and serve hot.
