Sima – Finnish Lemon Fermented Drink

Sima is a traditional Finnish lightly fermented drink made with water, brown sugar, lemon and yeast. Refreshing, naturally fizzy and perfect for spring.

Ingredients

  • Water 5 l
  • Brown sugar 500 g
  • Fresh yeast 10 g
  • Organic lemons 3
  • Raisins as needed

Tools

  • Large pot
  • Spoon
  • Strainer
  • Glass bottles
  • Funnel

Instructions

  1. Bring the water to a boil and dissolve the sugar.
  2. Let it cool until lukewarm, then crumble in the yeast and stir.
  3. Slice the lemons and add them with their peels.
  4. Leave at room temperature for 24 hours.
  5. Remove the lemons and gently squeeze them to extract remaining juice.
  6. Place raisins into clean glass bottles.
  7. Pour the sima into the bottles and close carefully.
  8. Let sit until the raisins rise to the surface.
  9. Chill before serving.
