Ingredients

  • Flour 350 g
  • Butter 100 g
  • Grated Parmesan 100 g
  • Diced Emmental 100 g
  • Fresh yeast 25 g
  • Mixed cured meats 100 g
  • Eggs 3
  • Milk 1/2 cup
  • Salt to taste

Instructions

  1. Dissolve the yeast in warm milk.
  2. In a bowl, combine flour, softened butter and salt; add the yeast mixture and let rise until doubled.
  3. Add the eggs one at a time, then Parmesan, Emmental and cured meats.
  4. Mix well and transfer to a buttered baking pan; let rise again until doubled.
  5. Bake at 180°C (356°F) for about 30 minutes; check doneness with a toothpick.
  6. If needed, continue baking 15 more minutes at 150°C (302°F).
  7. Brush the surface with beaten egg yolk and serve warm or cold.
