Ingredients

  • Cellentani pasta 500 g
  • Borlotti beans 400 g (drained weight about 240 g)
  • Canned tuna in olive oil 150 g
  • Medium onion 1
  • Fresh mint to taste
  • Extra virgin olive oil 60 g
  • Wine vinegar 2 tablespoons
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the cellentani in plenty of salted water until al dente.
  2. Drain and rinse under cold running water, then drain thoroughly.
  3. Drain and rinse the borlotti beans.
  4. In a large bowl combine beans, drained tuna and thinly sliced onion.
  5. Add the pasta and dress with olive oil, vinegar, salt and pepper.
  6. Stir in chopped fresh mint leaves.
  7. Mix well and refrigerate for at least 1 hour before serving.
