Ingredients

  • Bavette pasta 480 g
  • Speck 80 g
  • Pistachios 100 g
  • Pine nuts 20 g
  • Grana Padano 20 g
  • Garlic 1 clove
  • Small onion 1/2
  • Nutmeg to taste
  • Extra virgin olive oil 150 g
  • Salt to taste

Tools

  • Thermomix
  • Pot
  • Colander
  • Spatula

Instructions

  1. Chop pistachios 10 sec speed 6 then 12 sec speed 9
  2. Add garlic, pine nuts and nutmeg and blend 30 sec speed 6
  3. Add cheese and 50 g oil, blend 20 sec speed 6
  4. Add remaining oil and blend 1 min speed 9
  5. Transfer pesto to a bowl
  6. Chop onion 5 sec speed 7
  7. Sauté with oil 3 min 100°C speed 1
  8. Add pasta cooking water and cook 3 min
  9. Cook pasta separately and drain
  10. Add pasta, pesto and speck, mix 1 min
  11. Adjust with water and serve with pistachio crumbs
