Ingredients

  • Self-raising flour 225 g
  • Hard margarine 115 g
  • Caster sugar 115 g
  • Ground ginger 1 teaspoon
  • Bicarbonate of soda 1 teaspoon
  • Golden syrup 2 tablespoons (warmed)

  • Baking trays
  • Cooling rack
  • Fork
  • Wooden spoon

Instructions

  1. Preheat the oven to 375°F (190°C) and grease baking trays.
  2. Rub the margarine into the flour with ginger and bicarbonate.
  3. Add sugar and warmed golden syrup.
  4. Mix to form a stiff dough.
  5. Roll into walnut-sized balls with floured hands.
  6. Place on trays with space to spread and flatten with a fork.
  7. Bake for 10 minutes until golden.
  8. Remove while hot and cool on racks.
