Gharides Yiouvetsi is a traditional Greek baked dish made with prawns, tomato sauce, white wine and feta cheese, flavoured with oregano and parsley.

Ingredients

  • Large prawns 1 kg
  • Ripe tomatoes 500 g
  • Feta cheese 200 g
  • Garlic cloves 3
  • Onions 2
  • Dry white wine 2 glasses
  • Extra virgin olive oil 4 tbsp
  • Parsley to taste
  • Dried oregano to taste
  • Black pepper to taste
  • Salt to taste

Instructions

  1. Finely chop the onions and sauté them in olive oil until soft.
  2. Crush the garlic cloves and add them to the pan.
  3. Blanch, peel and chop the tomatoes, then add them to the onions.
  4. Season with salt and pepper, pour in the white wine and simmer for about 30 minutes.
  5. Sprinkle with oregano at the end of cooking.
  6. Spread half of the tomato sauce in a baking dish.
  7. Arrange the peeled prawns on top and cover with the remaining sauce.
  8. Scatter diced feta and chopped parsley over the surface.
  9. Bake at 180°C (356°F) for 10–15 minutes until lightly gratinated.
