Ingredients

  • Beef pulp 400 g
  • Tomatoes 150 g
  • Rice 100 g
  • Slightly unripe plums 8
  • Onions 2
  • Garlic cloves 2
  • Fresh parsley 1 bunch
  • Wild fennel a pinch
  • Dried mint to taste
  • Chili pepper 1
  • Butter to taste
  • Salt to taste

Instructions

  1. Cut the beef into cubes and simmer in a pot with 2 liters of water for about 1½ hours over low heat, skimming occasionally.
  2. Add thinly sliced onions, crushed garlic, chili pepper, chopped pitted plums, rice and a generous pinch of salt.
  3. Continue cooking for about 30 minutes.
  4. Meanwhile peel and chop the tomatoes and sauté them in a pan with a knob of butter.
  5. Add the tomatoes to the soup 5 minutes before removing from heat.
  6. Sprinkle with chopped parsley, wild fennel and dried mint. Serve immediately.
