Ingredients

  • Fresh tomatoes 800 g
  • Light pesto 80 g
  • Celery brunoise 20 g
  • Black olives brunoise 15 g
  • Gelatin sheets 15 g
  • Orange juice 10 g
  • Coriander 3 g
  • Fresh basil 4 g
  • Salt to taste
  • Black pepper to taste

  • Fine sieve
  • Bowl
  • Whisk
  • Individual molds
  • Refrigerator

Instructions

  1. Place all ingredients except gelatin in a saucepan.
  2. Cook gently for about 5 minutes.
  3. Remove from heat and add the gelatin, previously soaked in cold water.
  4. Strain through a fine sieve.
  5. Cool the mixture over ice, stirring until slightly thickened.
  6. Pour into individual molds and refrigerate.
  7. Before serving, spread a thin layer of pesto on top.
  8. Garnish with celery and black olive brunoise.
