- Fresh tomatoes 800 g
- Light pesto 80 g
- Celery brunoise 20 g
- Black olives brunoise 15 g
- Gelatin sheets 15 g
- Orange juice 10 g
- Coriander 3 g
- Fresh basil 4 g
- Salt to taste
- Black pepper to taste

Instructions
- Place all ingredients except gelatin in a saucepan.
- Cook gently for about 5 minutes.
- Remove from heat and add the gelatin, previously soaked in cold water.
- Strain through a fine sieve.
- Cool the mixture over ice, stirring until slightly thickened.
- Pour into individual molds and refrigerate.
- Before serving, spread a thin layer of pesto on top.
- Garnish with celery and black olive brunoise.
