Chicken roll-ups are a simple and flavorful dish made with thin chicken breast slices filled with creamy cheese, arugula and almonds, then pan-seared with sage and white wine.

Ingredients

  • Thin chicken breast slices 4
  • Soft spreadable cheese 120 g
  • Fresh arugula a handful
  • Chopped almonds 40 g
  • Extra virgin olive oil 3 tablespoons
  • Fresh sage leaves a few
  • Dry white wine 1 small cup
  • Salt to taste
  • Black pepper to taste

  • Toothpicks or kitchen twine

Instructions

  1. Lay the chicken slices on a cutting board and lightly flatten them if necessary.
  2. Spread a layer of soft cheese on each slice or use grated Grana Padano cheese.
  3. Roughly chop the arugula and distribute it over the cheese.
  4. Sprinkle a small amount of chopped almonds on each slice.
  5. Roll the chicken slices to form small rolls and secure them with toothpicks or kitchen twine.
  6. Heat extra virgin olive oil in a large skillet and place the chicken rolls inside.
  7. Add sage leaves, salt and pepper.
  8. Cook over medium heat, turning gently to brown all sides.
  9. Deglaze with dry white wine or brandy and let the alcohol evaporate.
  10. Lower the heat and continue cooking for about 10–12 minutes until the rolls are golden and cooked through.
  11. Before serving sprinkle with additional chopped almonds and serve hot.
