Have you ever wanted to bring to the table a simple main course that still looks elegant, one of those dishes that feels homemade yet special at the same time? That is exactly how I feel whenever I make these chicken and eggplant roll-ups. I love them because they combine wholesome ingredients and delicate flavors, with a gooey scamorza filling that makes every bite incredibly satisfying.

The first time I made them, I was looking for a different way to cook chicken breast without ending up with something dry or ordinary. I decided to wrap it in thin slices of eggplant, add scamorza, and finish everything with a gentle white wine sauce. As the roll-ups browned in the pan, the aroma of toasted breadcrumbs and slowly thickening sauce filled the kitchen. The final result was tender, flavorful, and creamy, perfect for a family dinner or for serving guests with something a little more refined. Let’s see how to make Chicken and Eggplant Roll-Ups.
