Ingredients

  • Artichokes 8
  • Onion 1
  • Canned peeled tomatoes 400 g
  • Mozzarella cheese 200 g
  • Extra virgin olive oil to taste
  • Lemon juice 1
  • Salt to taste
  • Black pepper to taste
  • Dried oregano to taste

Instructions

  1. Clean the artichokes, slice them thinly and soak them in lemon-acidulated water.
  2. Drain and blanch them in salted boiling water for about 7 minutes, then drain well.
  3. In a pan, sauté the finely sliced onion with olive oil.
  4. Add the tomatoes, season with salt and pepper, and cook for 10 minutes.
  5. Grease a baking dish and spread a layer of tomato sauce.
  6. Add a layer of artichokes and cover with more sauce.
  7. Top with diced mozzarella and sprinkle with oregano.
  8. Bake at 180°C (356°F) for about 15 minutes until melted.
