Ingredients

  • Butter 200 g
  • Sugar 200 g
  • Amaretti cookies 100 g
  • Dark chocolate 50 g (or more)
  • Eggs 4
  • Flour 125 g
  • Cognac 1 shot
  • Vanilla powder 1 sachet
  • Baking powder 1 teaspoon
  • Apricot jam as needed
  • Chocolate glaze as needed

Instructions

  1. Melt the butter and mix it with sugar.
  2. Add the egg yolks one at a time.
  3. Stir in crushed amaretti, melted chocolate, and flour.
  4. Add cognac, vanilla, and baking powder.
  5. Beat the egg whites until stiff and gently fold them in.
  6. Pour into a buttered and floured springform pan.
  7. Bake at 180–200°C (356–392°F) for about 1 hour.
  8. Once cooled, fill with apricot jam and cover with chocolate glaze.
