Ingredients

  • Beef (whole cut) 800 g
  • Crushed peppercorns to taste
  • 1/2 cup brandy
  • 1/2 cup white wine
  • 1 teaspoon mustard
  • 1 knob of butter
  • Extra virgin olive oil to taste
  • Salt to taste

Tools

  • Baking tray
  • Sharp knife
  • Strainer
  • Stovetop
  • Wooden spoon

Instructions

  1. Salt the meat and roll it in coarsely crushed pepper.
  2. Place it on a lightly oiled baking tray and oil the surface slightly.
  3. Bake at 200°C (392°F) for about 40 minutes.
  4. Remove the meat and collect its juices.
  5. Place the tray on the stovetop and deglaze with white wine and brandy.
  6. Add the mustard and the meat juices.
  7. Enrich the sauce with a knob of butter, strain it and pour it over the sliced meat.
  8. If needed, add half a cup of water during the sauce reduction.
