- Beef (whole cut) 800 g
- Crushed peppercorns to taste
- 1/2 cup brandy
- 1/2 cup white wine
- 1 teaspoon mustard
- 1 knob of butter
- Extra virgin olive oil to taste
- Salt to taste

Instructions
- Salt the meat and roll it in coarsely crushed pepper.
- Place it on a lightly oiled baking tray and oil the surface slightly.
- Bake at 200°C (392°F) for about 40 minutes.
- Remove the meat and collect its juices.
- Place the tray on the stovetop and deglaze with white wine and brandy.
- Add the mustard and the meat juices.
- Enrich the sauce with a knob of butter, strain it and pour it over the sliced meat.
- If needed, add half a cup of water during the sauce reduction.
